Hi friends!! How’s it going this Tuesday?? It’s a busy week for me, but something SUPER FUN is waiting for me at the end…my sister’s BACHELORETTE PARTY!!! I CANNOT wait!!! In the meantime though, we celebrating a birthday a couple weeks ago (I know, I know, another one…hahaha) and I wanted to share a quick post on it 🙂
2 weeks ago, Peter turned 41. We had a very small dinner party at our house. I reached out to No Thyme to Cook only 2 days before his birthday and lucky for me, they had just had a cancelation and could fit me in.
We discussed a menu, Gwyn sent me choices and we decided on –
SALAD – Spinach & Radicchio Salad with Pears, Goat Cheese & Toasted Pine Nuts with Honey-Orange Dressing
ENTREE – Cranberry-Orange Glazed Pork Loin
SIDES – Orzo with Olive-Mustard Butter & Lemon Roasted Green Beans
DESSERT – Pumpkin Caramel Bars with Bacon

This salad was INCREDIBLE!! My girlfriend Nicole and I were discussing it again yesterday. It was that good. The combination of goat cheese, pears and pine nuts…PERFECTION!!
Then the main dish…YUMMY. I decided on Pork because so many of the other dishes were chicken and steak. I know those would have been just as delicious but we make so many of those at home already…lots of variations, so I wanted something outside our dinner box.
The cranberry orange glaze really made this dish for me. But the pork itself was unbelievably moist and cooked perfectly. And, the orzo with the olive-mustard butter was soooooo delicious!! I will certainly make that side again and again and again!!
As you can imagine, lots of fun was had!! Mike and Peter could not hold back on the cream cheese frosting leftovers.
And this little girl!! Her personality is infectious!! I didn’t even know she had taken my shoes when I went upstairs to put Shay down. Too darn cute!! And thanks to whoever grabbed my phone and scored this shot!!
Then there was dessert!!! So. darn. good. With a name like Pumpkin, Salted Caramel, Bacon cupcakes, how can they not be OUTSTANDING?!?!?

It was the best last minute dinner decision ever. I highly recommend No Thyme to Cook…extremely professional and super easy to work with. And, my kitchen was SPOTLESS when they left. That in itself is priceless!!
